Cleaning: The brown Chana dal is sorted to remove dust or impurities.
Soaking: Cleaned dal is soaked for 8-10 hrs. to activate the germination process.
Sprouting: The dal is drained periodically and later placed in perforated drums and allowed it to sprout for the next 24-36 hrs. under controlled temperature and humidity.
Drying: The dal is either solar dried or mechanically dried using a dehydrator.

Roasting: The dried dal is slightly roasted for a nutty flavor and later cooled.
Milling: The dal is subjected to milling in either stone mills or power grinders to make a fine Besan flour.
Sieving: Milled flour is sieved to remove any coarse particles to give a smooth flowing flour.
